Frankie’s Kaleicious Salad

After I kept seeing Emma Chamberlain eating the Erewhon kale and white bean salad, it was finally time to re-create it. The salad has very simple ingredients but is nutrient-dense. I know kale may not be everyone’s favorite but I promise this recipe will change your mind… I’ve had it three times this week…

1.     De-stem, wash + chop 1 bunch of kale

2. Drizzle 2 tablespoons of olive oil on kale + massage (really get in there)

2.     Dice one avocado

3. Drain 1 can of white beans (I use TJ’s Organic Great Northern Beans)

3.     Sprinkle 2 tablespoons of pumpkin seeds + 2 tablespoons sunflower seeds

4.     In a small bowl mix 2 tablespoons olive oil, 2 tablespoons tahini, 2 limes, salt + pepper to taste + a little drop of honey

5. Drizzle dressing over salad + toss

6.     Top with crushed croutons for extra crunch + deliciousness

7. Enjoy!
