Frankie’s Oat Bars

1.  Heat the oven to 350°F and arrange a rack in the middle

2.  Place 1 cup of peanut butter or almond butter (or both – because why not?), 1/4 cup of coconut oil, and 1/3 cup of honey, 1 teaspoon of pure vanilla extract and ½ a teaspoon of cinnamon; mix until well combined

3.  Coat 3 cup of oats with liquid mixture

4.  Fold in cacao nibs and or chocolate chips, seeds, nuts and coconut flakes

5.  Place in oven for 25 minutes or until golden brown; let cool naturally for 30 minutes and then in fridge for one to two hours to make sure it holds.

Little note, the bars are best to be consumed within the first week but are also freezer friendly.
